Our farm-bred, home-grown, slow-grown native breeds are left to reach full maturity and are left to graze on the rich pasture, full of unique meadow herbs surrounding the River Test, next to which we farm. During the winter, their diet is supplemented with silage cut from our own fields.

We allow the beef to hang and mature for at least 3 weeks (and usually longer) to intensifying the already deep flavour.

Our herd of cattle are predominantly made up of Belted Galloway and Galloway crosses.

To meet consumer demand we may occasionally supplement our beef with other beef sourced from a select number of local Hampshire farms that share our ethos.
